One of my absolute favorite foods is fish tacos. I often order them at restaurants but this fresh easy fish tacos recipe is great to make at home. It really is very simple to make but the fresh flavors are amazing! It is essential to use fresh cilantro in this recipe. The cilantro, tomatoes and yogurt sauce make this one seriously yummy dish. I used corn tortillas in order for the recipe to be gluten free. You can use flour tortillas though if you prefer them.

Also, many of the yogurt tubes you buy at the store have artificial colors and flavors. Without too much time and trouble at all, you can make your own yogurt tubes that are made from simple fresh ingredients. You AND your kids will love them! [Read more…]

Quick & Easy Red Pepper Chicken Recipe

red peppar chicken

I am always on the look out for quick and easy recipes that help me get dinner on the table fast. This easy red pepper chicken recipe does just that. You can make it very simply by seasoning the chicken and cooking it in a pan. This recipe is great for picky eaters too because you can control the amount of seasoning on each chicken piece. My kids prefer a bit less seasoning on their chicken and with recipes like this that is simple. If you want to take this recipe to the next level, you can also make a sauce with a bit of cream cheese, heavy cream and bacon and top everything with it. It isn’t as healthy but it sure is yummy! You really can’t go wrong with heavy cream and bacon. Mmmmm.

We used this Zoku personal ice cream maker to make the ice cream. It is nice because there is no electricity required  and you use on any countertop; just pour in your chilled ice cream mixture, churn and scrape the stainless steel bowl, and watch as the ice cream freezes before your eyes. This is a single serve ice cream maker too so for those of us worried about eating too much ice cream in one sitting.
