Chop up 1/2 cup of the chocolate chips and set aside.
Add dates to a food processor and blend until they become smooth paste/dough.
Add in the cocoa powder and coconut milk, pulse until combined.
Dump the date mixture into a large bowl, add the instant oasts and the pinch of salt.
Knead with the back of a spoon until combined.
Roll the mixture into small bite-sized balls.
Then roll each ball in the chopped chocolate chips.
Enjoy immediately or store in the refrigerator for up to 10 days.
