Easy Oven Roasted Veggies Recipe

If you are looking to get more vegetables in your diet, you will want to check out this easy oven roasted veggies recipe. It couldn’t be more simple but it helps make veggies taste great. There is just something about oven roasting the elevates the taste of the veggies. It takes very little prep time to make these vegetables and only about 20 minutes to roast them.

Oven Roasted Veggies

For my oven-roasted vegetables, I used cruciferous vegetables including broccoli and cauliflower. Cruciferous vegetables are rich in nutrients, including several carotenoids, beta-carotene, lutein, zeaxanthin); vitamins C, E, and K; folate; and minerals. They also are a good fiber source. The full printable recipe is below.

This recipe of roasted cruciferous vegetables is so simple to make but it is amazing how tasty they are. Your whole family will be asking for seconds when you make this vegetable side dish.

How to Make Oven Roasted Vegetables

Preheat oven to 450 degrees. Line a baking sheet with parchment paper. Place the veggies onto the baking sheet spreading them out. Next Drizzle olive oil on them and then sprinkle the veggies with paprika, garlic salt, and lemon pepper.

Bake at 450 degrees for approximately 20 minutes. Stir the vegetables at about the 10-minute mark. The veggies will still be fairly crunchy. If you like them a bit softer increase your cooking time.

Allow to sit and cool slightly and then place on a serving dish. Then enjoy your healthy and easy oven-roasted veggies!

This simple mix of cauliflower, broccoli and carrots are easy to oven roast.

Ingredients

  • Cauliflower cut
  • Carrots
  • Broccoli cut
  • Olive Oil
  • Paprika
  • Garlic salt
  • Lemon Pepper

Instructions

  • Preheat oven to 450 degrees.
  • Line a baking sheet with parchment paper.
  • Place the veggies onto the baking sheet spreading them out.
  • Drizzle olive oil on them.
  • Sprinkle the veggies with paprika, garlic salt, and lemon pepper.
  • Bake at 450 degrees for 20 minutes. Stir at 10 minute mark.
  • Allow to sit and cool slightly.
  • Place on a serving dish.
