Ingredients
- ● 2 pounds petite red potatoes, washed well
- ● 3 tablespoons melted butter
- ● 2 tablespoons olive oil
- ● 1 teaspoon salt, or to taste
- ● ½ teaspoon black pepper, or to taste
- ● ¼ teaspoon garlic powder
- ● ½ cup grated parmesan cheese
- ● Chopped parsley, for garnish
Instructions
- Place washed potatoes in a large pot and cover with water. Bring to a boil and cook for 30 minutes,
until soft and fork tender. - As the potatoes are cooking, preheat the oven to 425°F. Lightly oil a large rimmed baking sheet.
- Drain the potatoes well and let it sit for 5-10 minutes to dry out a bit.
- Transfer to the lightly oiled baking sheet and use a potato masher, large serving fork, spatula, or measuring cup to smash it to desired thickness. Thinner will be crispier and thicker will be fluffier.
- Drizzle the melted butter and remaining olive oil evenly over the potatoes. Sprinkle with salt, pepper, and garlic powder.
- Bake for 30-40 minutes, until the potatoes are golden and crisp along the edges.
- Top immediately with freshly grated parmesan cheese and chopped parsley. Enjoy!
Notes
Hold the potato in place and gently smash it to desired thickness. Because the baking sheet is oiled, the potatoes could go flying if not held in place.
If the potatoes completely separate when you smash them, just push them back together. They will crisp up into one piece when you bake them.
Flipping is not necessary and can make it more likely that the smashed potatoes fall apart. If you wanted extra crispy potatoes then that can be achieved by smashing the potatoes into thinner pieces.
To keep the potatoes from sticking to your smashing device of choice, lightly oil it or place a parchment paper between the smasher and potato.
