Nothing says summer like homemade ice cream. This homemade coconut ice cream recipe is made with just a few simple ingredients. We used this Zoku personal ice cream maker to make the ice cream. It is nice because there is no electricity required  and you use on any countertop; just pour in your chilled ice cream mixture, churn and scrape the stainless steel bowl, and watch as the ice cream freezes before your eyes. This is a single serve ice cream maker too so for those of us worried about eating too much ice cream in one sitting.
