Nothing says summer like homemade ice cream. This homemade coconut ice cream recipe is made with just a few simple ingredients. The ice cream at the store tends to full of ingredients that I can’t pronounce which I am trying to avoid. You can feel good about eating this homemade ice cream and feeding it to your family.
We used this Zoku personal ice cream maker to make the ice cream. It is nice because there is no electricity required and you use on any countertop; just pour in your chilled ice cream mixture, churn and scrape the stainless steel bowl, and watch as the ice cream freezes before your eyes. This is a single serve ice cream maker too so for those of us worried about eating too much ice cream in one sitting.

Homemade Coconut Ice Cream Ingredients
1¾ Cup coconut milk
½ Cup agave nectar
3 Tbsp melted coconut oil
A pinch of salt
2 Tsp homemade vanilla extract
Homemade Coconut Ice Cream Directions
Place the ice cream maker bowl in the fridge. We used this Zoku personal ice cream maker but you can use any ice cream maker just follow the directions for you model.
Place all ingredients in a bowl and mix for 2-3 minutes.
Take the mixture to the fridge and let it cool for 2 hours.
Pour the mixture into the ice cream maker bowl and churn according to manufacturer’s instructions.
Serve, top with some coconut flakes, and enjoy
If you like your ice cream a bit more crunchy, you can add ½ cup coconut flakes to the mixture to amp up the crunchiness.
