It is girl scout cookie season and my favorite is Thin Mint girl scout cookies. I also love brownies. They are both great on their own but put them together and you get something even better…… Thin Mint Brownies!
These are so simple to make with a boxed brownie mix however if you have a favorite homemade brownie mix you could use that instead. Together these make simple and easy chocolate mint brownies.
Wondering Where You Can Buy Girl Scout Cookies?
Just ask your friends in person or on social media. I was always happy when my friends would support my daughters when they sold girl scout cookies. You also can often find cookie booths at local grocery stores and events. There also is an official Girl Scout page where you can find a cookie booth near you!
If cookie season is over and you are still craving girl scout cookies, (or want to make these awesome girl scout cookie brownies), Aldi carries knock offs of both Thin Miny Girl Scout cookies and Somoas. They are so good too and a great price!
Thin Mint Brownie Recipe
The recipe calls for just a few simple ingredients and makes a great chocolate mint dessert.
1 box of brownie mix, any brand
3 eggs
1/2 C. milk
2/3 C. butter, melted
1 C. Thin Mint cookies, chopped + a few extra to sprinkle on top of the brownie batter.
To make the brownies you follow these simple directions. The full printable recipe is below.
#1. Preheat the oven to 350 degrees. Line a 9×9 baking dish with parchment paper or foil. Spray w/ non stick cooking spray if using foil.
#2. Combine the brownie mix, butter, eggs and milk, mixing well.
#3. Add in the 3/4 cup of Thin Mint cookie pieces.
#4. Pour the brownie batter into the baking dish and spread out using a large spoon or spatula.
#5. Sprinkle the extra cookie pieces on top of the brownie batter.
#6. Bake for 35-40 minutes.
#7. Remove from the oven and although the brownies to cool completely, prior to cutting.

You are right! And if you are out of the Girl Scout version, many grocery stores sell a similar cookie now. I even found some at Aldi.
